Showcasing his expertise and philosophy for fine drinking, Rusty Cerven helms and curates a progressive cocktail selection that presents a stark departure from the conventional. Inspired by Mother Nature, the experiential cocktail offerings take guests on a sensorial journey through contrasting elevations, from sea level and rainforest, through to the desert and alpine altitudes. Indulge in signature concoctions such as the Samphire Cocktail; a balanced blend of London Dry Gin, Noilly Pratt, samphire, oyster leaf and citrus oils with rich umami flavours and a zesty, citrus finish. Alternatively, savour The Shaman; concocted from dark rum, lime, shiitake mushrooms, chuchuhuasi bark tincture and burnt white grapefruit.
